ingredients to make some Delicious Vegetable Khichadi
About Khichadi:
Khichadi is a most balanced meal with all the important ingredients your body needs. It is high in protein and easy to digest. This dish is full of protein, which contains steamed yellow moong daal and some rice mixed with some vegetables of your choice, and necessary spices from my spice treasure box. Simple Khichadi (Saadi Khichadi) is often cooked with just salt and turmeric powder when in sick.
- Grains- Rice and Yellow moong split daal (You can also use Yellow lentiles/Toor Daal)
- Vegetables- Squash/Zucchini, Carrots, Potatoes, Peas, Spinach, Onions, Tomatoes
- Spices/Masalas- Cumin seeds, Green chilies, Curry leaves, Asafetida, Garlic, Turmeric powder, red chili powder, salt
- Optional- Cinnamon stick, Cloves, Bay leaves, Black cardamom or Garam masala powder
- Measure 2:1 (rice: lentils ratio): Mix and wash it properly
- Add Vegetable Oil and Ghee (optional) to the pan you wish to use for
- Add in these order- cumin seeds, asafetida, turmeric powder, green chillies, curry leaves, Cinnamon stick, cloves
- Add your vegetables and 1:2 ratio of rice and daal
- Add Red chili powder and Salt (according to taste)
- Let it cook with the lid on for about 35-45 minutes on a medium flame. (Keep checking the bottom doesn't stuck- Non stick pan recommendable)
If you are using standard Indian pressure cooker then give it about 3-4 whistles or 10 minutes.
If you are using instant cooker give it about 20-25 minutes by pressing Manual>High Temperature>25-30 minutes.
So are you ready to try some delicious Khichadi? It’s time to eat. Traditionally it is served with some Ghee (Clarified Butter) on top and some salted chopped onions and Butter Milk (Yogurt+Water).
Ayurvedic Doctors often advice to eat simple Khichadi when in fever or coming out of any surgery. It is a light meal, easy on your stomach and gives you strength to recover faster. Also, often doctors recommend simple Khichadi with yogurt when having loose motion and diarrhea. So, yes it is delicious medicinal food.
